Fredericksburg's Der Lindenbaum German Restaurant features authentic German cuisine and one of the largest selections of German beers (bottled and draft) in Texas. 


          Der Lindenbaum -- "The Linden Tree" occupies a special place in the hearts of Germans.  Songs and poems have been written in its honor, and in the springtime, the fragrance of its lovely blossoms fills the air.  In many ways, the Linden tree is to a German what the bluebonnet is to a Texan: a symbol of the homeland.  When Ingrid Hohmann opened her restaurant in Fredericksburg, she named it Der Lindenbaum for the ancient Linden tree that grew in front of her centuries-old family home high in the Eifel Mountains of Germany.

Ingrid is a professional chef who apprenticed at and graduated from the Hotel and Restaurant School at Maria Laach, one of the foremost and most prestigious in Europe.  She began the restaurant as a konditorei, or bakery, featuring apfel strudel, streuselkuchen, and Black Forest cake.  However, the demand for her delicious Rheinland-style lunch specials gradually expanded it into what it is today, one of the finest German restaurants in Texas.
Der Lindenbaum features fine German food items not normally found on this side of the Atlantic, such as Konigsberger Klopse (a delicious dish of beef and pork meatballs in a delicate caper sauce -- the capers used in this recipe are grown in the Mediterranean area), and Rheinischer Sauerbraten (a roast, marinated for a week in a sweet/sour sauce), as well as the kinds of items most people would expect to find in a Texas-German restaurant, including the best Schnitzels on either side of the Atlantic.
The menu offers something for every taste, for big and small appetites, including:
Schnitzels: Wiener, Jager, Paprika, & Kase-style cutlets.
Gulasch: Spicy stewed beef
Rinderbraten: Roasted beef
Sauerbraten: Rheinland-style sweet and sour marinated roast beef
Schweinekotelett: Pork chops in mustard sauce
Pfeffersteak: Peppered choice ribeye steak
Curry-Huhn: Curried chicken
Konigsberger Klopse: Beef and pork meatballs in caper sauce
Bratwurst: German sausages
